Same as Salles Martin, the harvest is picked by hand into small crates and carefully sorted upon entry to the cellar. Whole bunches are chilled and then pressed direct to ferment in 600L oak barrels, around one third new, first and second year. The malo doesn’t take place. It’s left untouched and to its own devices for 7 months, after which it’s racked to steel tank to finish the ferment and to blend before bottling. It’s lightly sulfited at pressing and after racking.
