Winemaking

It’s made by the Traditional Method, grapes very gently pressed to tank to settle before fermentation by natural yeast to a dry base wine in stainless steel tank. In the spring following the harvest, it’s mixed with yeast and sugar to provoke a second fermentation, and immediately bottled to get all this second fermentation to happen inside the bottle. It rests on its lees for at least 18 months before disgorgement. It’s disgorged by hand with no dosage added.

A normal year with 400mm rainfall, normal temperatures and humidity, with intense heat in the summer. Very healthy fruit. Early harvest.
