About: A beautifully soft and fruity Cava in the style of a Pet Nat from the Penedes region reflecting the Els Vinyerons philosophy for making easy drinking, easy to understand, clean, simple but satisfying natural wines. They still capture the fruit of the grape, soil and climate.

Location: near Sant Marti Sarroca just north west of Vilafranca del Penedès.
Size ha: 10.
Age: vines planted between 1968 and 1998.
Soils: limestone with traces of fossilised oysters.
Exposition: east.
Altitude: 250m.
Training: on wire.
Farming: organic.
Average yield hl/ha: 30.
Climate: Mediterranean.

Winemaking

The hand-picked harvest is de-stemmed, and gently pressed direct to ferment in stainless steel. Using natural yeasts, temperature controlled to 15ºC, it’s in tank around 14 days, then bottled when there’s 21g residual sugar left and the ferment continues in bottle. It’s on lees at around 15ºC for 18 months before being disgorged for sale. There’s no liqueur d’expedition, no stabilisation, clarification, or filtration. And no sulfites. There’ll be about 2g residual sugar.
