Winemaking

Hand pricked. De-stemmed fruit, crushed in press, then direct to wild ferment in 2000L old barrel 24 hour cool maceration on skins, bottled in January after the harvest by hand, 18 months in bottle on full lees to finish fermentation, then disgorged.

Very hot and dry summer which caused sunburn, acids a bit higher than 2018 (which was also hot and dry) but some timely rain in august boosted acids.
Part of it was disgorged, part not.
