Cuvée: La Serra
About: new in 2018 from fruit that used to be sold in bulk to Juve y Camps, a quality local producer of Cava. This is the mirror wine of L’Ermot which is pure Macabeu. Whole bunch maceration gives it a visceral texture.
Location of vines: Subirats.
Age: planted in 2008.
Soils: stony, clay-limestone.
Exposition: south west.
Training: on wire in cordon de royat.
Farming: organic, with the emphasis to protect soil moisture and microbial activity.
Average yield hl/ha: 35.
Whole bunch, not crushed, macerate for 2 weeks in inox. Racked and returned to tank. The malo happens naturally. Temperature was controlled to 22º. No sulfites added. Bottling without fining or filtration.
Vintage Notes 2019
A wet winter and spring provided reserves of water to survive and thrive during a hot, dry summer. The wines are both very ripe and juicy.
