About: As always it’s about the vineyard. Most of the vineyard is right under Clos des Mouches, and right next to Pommard Clos des Epenots, so it’s rare to get such an expression of Beaune as this. It’s sturdy as Pommard.

Location: 2 parcels, from two contiguous parcels, one a 44-year-old selection massale planting, the other a 26- year-old selection clonale, at the southern end of the Beaune Premier Cru slope below the famous vineyard of “Clos des Mouches” and next to Pommard’s grand climat “Les Epenots”.
Size: a few rows
Age: part planted in 1980 of clones 114 and 115, the other part planted 1940 to 1960 selection massale. Clones give brightness and crunch, massale gives more depth.
Soils: getting very Pommard, dark clay, but still quite limestone, with more marl, lending the fine tannins and blue fruited side of Pommard.

Same vinification as Savigny Les Beaune but the night before pressing does a pigeage to release more juice and to slow down uptake of sugar, which is more risky with the Savigny. Thus, hand picked and sorted for over 8 hours to ensure only the best fruit made it to the fermenter, a 30hl tronconic Stockinger from 2016. 80% of the grapes were destemmed with the remaining 20% placed on top as whole cluster in a wooden vat. Dry ice was used to cool the fruit to 12ºC and to protect the berries against oxidation. Natural fermentation with just one pump over and one pigèage for temperature control thus basically an infusion. The wine was then basket pressed on the 14th day after harvesting. Settled for two weeks before 11 months in old 300L barrels. Racked under air pressure and settled for two weeks in tank before being bottled under a DIAM closure without fining or filtration.
Vintage Notes
A warm year, but unlike 2019 when it was very hot at harvest so was hard to get the results wanted, 2020 was much fresher at harvest, which gives width as well as weight. Great for reds, spectacular for whites, as good as 2014.

Tasting: super nose of blood and iron, cassis, very Epenots, pure, fresh, the palate is very cool, fresh, lively, pure fruit, energy, dense but lively, a beauty, cassis, iron, sweet spice. very long.
