Winemaking

The different grapes are very gently pressed together direct to cold settle in tank, then moved to ferment by natural yeast, in one 15hl foudre at ambient cellar temperature. The wine isn’t touched for six months until bottling. There’s no addition of sulfites or any other additives. But there’s a very light filtration and adjustment of SO2 at bottling.
