Age: vines planted in 2005 and some Garnacha Blanc from 1940 next to L’Ermot.

Farming: organic, with the emphasis to protect soil moisture and microbial activity.

Winemaking

Hand harvested fruit is de-stemmed and crushed and then put into stainless tank to macerate for one week. Garnacha is harvested first, usually around one to two weeks before the Malvasia, and they’re blended after maceration to finish the ferment together. Malo happens naturally.

A hot, dry summer followed a wet winter and spring so the wines are both very ripe and reasonably juicy.
