About: Primitivo’s Amontillado is from a solera that dates back 70 or 80 years and has an average age of 15 years. It has an incredible intensity which it wears with a relaxed energy.

Pressed slowly, gently direct to ferment in inox tank at temperatures controlled to between 15 and 18ºC, with wild yeasts. The malo happens naturally and it doesn’t lose any freshness. The wine is fortified with 2º (with alcohol from La Mancha – sadly after all these years it seems Sherry hasn’t figured out to make its own distillate and organically but we hope someone will correct us one day). Then enters the solera system where it stays for 5 years before being bottled without any clarification, unfined, unfiltered and un-sulfured. This started life as a Fino for the first five years of its life then it’s fortified again with 3º and aged oxidatively for a further 10 years at least.
