About: Primitivo’s first and main sherry wine. Most Fino is aged around 2 years, while this sees 5 years ageing under flor and you need 5 years to develop such complexity of aroma. As such it’s a steal. If you like sherry. It’s also zero sulfites.

Winemaking
Pressed slowly, gently direct to ferment in inox tank at temperatures controlled to between 15 and 18ºC, with wild yeasts. The malo happens naturally and it doesn’t lose any freshness. The wine is fortified with 2º (with alcohol from La Mancha – sadly after all these years it seems Sherry hasn’t figured out to make its own distillate and organically but we hope someone will correct us one day). Then enters the solera system where it stays for 5 years before being bottled without any clarification, unfined, unfiltered and un-sulfured.

Tasting: fresh and salty, gentle, elegant and balanced, low acid but salivating, aromas principally apple and grapefruit, with bitter herbs and almonds. Iodine and quince. Super.
