Winemaking

The harvest is picked by hand into small crates and carefully sorted upon entry to the cellar, where it’s put in a cold room until Thierry has the time to process it, depending on the demands of the ripening fruit in the field. It’s then very slowly pressed to 10 to 15 year old barriques to ferment very slowly by natural yeasts for a couple of months. It’s racked and returned to age a further year before bottled with a touch of sulfites for stability.

Tasting: aromas of grilled, smokey almond, peach and apple bewitch on the nose, followed by both sweetness and freshness on the palate. Lovely balance between the richness of fruit, freshness of acidity and gentle texture. Some spice and lavender add complexity.
