About: Fine, thirst-quenching, wonderfully refreshing with clean and pure fruit. This light, easy, fun sparkling white is just about the best aperitif or palate cleanser or fix of bubbles we know. As with all La Salada-Mas Candí joint productions, it’s from organic vines and made without any additives or preservatives.

Soils: clay-limestone.
Exposition: south west and north east.
Altitude: 280m.
Training: Xarel-lo on wire cordon de royat, Parellada in gobelet or vaso.
Farming: organic, with the emphasis to protect soil moisture and microbial activity.
Average yield hl/ha: 52.
Climate: Mediterranean.

Winemaking

Xarel-lo is harvested first, then Parellada, they’re pressed directly to stainless steel to ferment then blended and bottled after 15 days, and disgorged according to order, from December in the year of making. Simple.

Tasting: as good as the very first vintage, 2014, of this wine, soft, luscious, very fresh, pure and light, yet with clean fruit with an edge.

A hot, dry summer followed a wet winter and spring so the wines are both very ripe and reasonably juicy.
