Winemaking
Fruit is hand harvested into small cases, de-stemmed, then pressed directly to enamel tank to ferment by native yeasts for 12 days at 20ºC with the malolactic fermentation blocked to keep the acidity. It’s aged matured for 6 months in enamel tank, then bottled lightly fined and filtered for clarity (that the market and a young wine demands).
