Winemaking

Hand harvested. De-stemmed and crushed and put in stainless steel. 10 days on skins with one brief gentle punchdown a day just to keep the cap wet. Very gently pressed and moved to an old tinaja for 2 months, then to old oak barrel for six months. No additives whatsoever, no added yeasts, no sulfites, no clarification, no filtration. Corks and closure are also 100% natural. Bottles are lightest on market, recycled.

Vintage Notes 2017

Date harvested: Sept 16
Yield hl/ha: 20
Date bottled: 2018-04
Bottles produced: 300
Alcohol %: 15.88
SO2 Total: < 5
Tasting: dense and grippy with tons of energy and emotion, complex aromas of smokey, leather, tobacco infused (I don’t like tobacco but it works as an aroma in Grenache Noir). Tons of character. Manages to be cool and airy at the same time. Wears its alcohol lightly because plenty of freshness.
