About: New in 2019, a micro production of Rosé as real wine, with weight, texture, colour and plenty of spicy flavour. Just 500 bottles.
Location: El Tiemblo, Sierra de Gredos.

Age: vines planted 1980.
Soils: poor, chalky.
Farming: Organically grown. No pesticides, herbicides, insecticides, fungicides, or chemical fertilizer No use of copper or sulphur. No ploughing. All plants, grasses, flowers allowed to grow. The climate means diseases like mildew don’t take hold. The vineyards are alive with biodiversity of flora, fauna and microbial life, grasses and flowers are allowed to live and flourish, with only those around the vine cut back. This protects the topsoil from erosion from wind and rain (if any) and evaporation of moisture.
Average yield hl/ha: 20.
Climate: hot in summer, cold in winter, low rainfall.
Bunches are crushed by hand and put into stainless steel tank for 2 hours. Pressed manually in a small basket press and returned to stainless steel to continue fermenting. Stays there until bottling 4 months later. No additives whatsoever, no added yeasts, no sulfites, no clarification, no filtration. Corks and closure are also 100% natural. Bottles are lightest on market, recycled.
