Appellation: DO Penedès.
Cuvée: Vinya Oculta.
About: Amos top wine – until he produced the extraordinary Arrels del Cielo. Majestic, full of umami, the name means the dark side of the vineyard because it’s north-facing so ripens more slowly, more intensely. While Missatge expresses a celestial side to Macabeu, this very original expression of Xarel-lo expresses a deep connection with the earth, rich and complex. Gastronomic, it will support meat and fish stews and a wide range of herbs and condiments, lime, clove, liquorice and many more.
Location: on top of a small hill located at south of Vilafranca del Penedès near La Munia.
Size ha: 1.8.
Age: vines planted in 1989 by grandfather.
Soils: pure limestone, calcareous-clay and sand (all three soils are vinified separately).
Exposition: rows orientation east-west.
Average yield hl/ha: 40.
The harvest is made manual into boxes of less than 15 kg, very slowly, selectively, and in several passes to pick only perfectly ripe grapes. Grapes not ripe enough are not picked. The harvest is put into stainless steel (inox) tank and foot-trodden and then closed to start the fermentation in semi-carbonic manner and with some temperature control to a max of 22ºC. It spends around 10 days on the skins before being painstakingly pressed to two old 300L French oak barrels to continue the fermentation. The wine stays there for ten months un-touched before racking by gravity and bottling without stabilization, clarication, filtration nor sulphiting.
